Tips for Selecting Foie Gras from Live Geese

1 To distinguish between goose liver and duck liver, note the label colors: goose liver is labeled with a golden-yellow tag, while duck liver is labeled with an ivory-colored tag.

2 —The liver must be sufficiently large; a whole, fresh foie gras typically weighs between 700 and 800 grams.

3 Typically, foie gras from ordinary geese is ivory-colored with a faint pink tinge, or pale golden yellow, or pale greenish-yellow; in contrast, foie gras from Toulouse geese is pure ivory white, while that from Strasbourg geese tends to be more pinkish and firmer.

4 Absolutely no selection of injured or damaged foie gras.

5 Cold dishes generally involve removing the blood vessels and tendons from foie gras.   It is then finely ground into a paste—what we commonly call foie gras pâté.
